Fairmail

The classic rhum agricole, the ‘Ti Punch (meaning petite punch, referring to the serving size of the potent cocktail) is given a NYE-style update by combining it with sparkling wine à la the rum-and-champagne cocktail the Airmail.

Ingredients

1.5 oz Fair Game Carolina Agricole

3/4 oz fresh lime juice

1 oz sugarcane syrup

1 oz champagne or dry sparkling wine


Instructions Add the Carolina Agricole, lime juice, and sugarcane syrup in the bottom of a champagne flute.

Stir to combine. Top with sparkling wine, and serve.


Recipe Notes

Sugarcane syrup is an almost-forgotten big brother to molasses, obtained by the first cooking of fresh-pressed sugarcane juice. You can buy it online, at Southern specialty food stores, or in our tasting room, where we have a sugarcane syrup created from the same South Carolina cane as our Carolina Agricole.


Because sugarcane syrup will vary in color, viscosity, and sweetness from batch to batch, you may need to add water to around a 1:1 ratio to make it easier to incorporate and tastier in your cocktail.
