1.5 oz Fair Game Amber Rum chanterelle-infused
1 oz Fair Game Two-Step
.5 oz simple syrup
barspoon lemon juice
Instructions Combine all ingredients except lemon peel in a stir glass. Add ice, and stir until thoroughly chilled.Strain into a coupe glass, and express lemon peel over the glass. Garnish with lemon peel and thyme sprig, and serve.
To make the chanterelle-infused Amber Rum, we steeped 50 g dried chanterelle mushrooms in a bottle of Amber Rum for 3 days. Filter mushrooms out before serving.
