Amber Rum Swizzle

The national drink of Bermuda, there are as many variations on swizzles as there are days in the year.  We prefer a slightly subdued version, simply pairing our Amber Rum with lime juice and falernum (a standard tiki mixer consisting of lime, cloves, and almonds), but feel free to add pineapple juice, orange juice, or ginger beer if you’re so inclined.


The most important part of the swizzle is the act of swizzling your drink – rolling a bar spoon or swizzle stick between your hands to quickly stir your drink.  You’ll know if you do it right by the glass becoming frosted.

Amber Rum Swizzle

Ingredients

2 oz Fair Game Amber Rum

3/4 oz fresh lime juice

3/4 oz Falernum Syrup

Crushed ice

Angostura bitters


Instructions:

Fill a Collins glass halfway with crushed ice. Add Amber Rum, lime juice, and falernum. Swizzle to blend, then add ice to the top of the glass and swizzle again until the glass is frosted. Top with more ice (if needed), bitters, and a straw. Serve.

Falernum syrup can be purchased at Fair Game Beverage Co., but it is easy to make if you're having trouble finding it in stores.  Check out this article for more information!

Swizzle sticks originally were, according to legend, twigs from a certain tree that imparted a bitter characteristic to the drink after swizzling for long enough - hence the addition of bitters in modern recipes.
