Lyle Estill

I'm the corner office guy at Fair Game Beverage.  Fair Game is an anchor of The Plant--which is my busted biodiesel project.  I used to put 7500 gallons on trucks, but now I put 750ml  in bottles.  I suppose my role in the universe is to move liquids around.  My favorite Fair Game product is our Rye Whiskey.  Neat.

Operation Manager

Rob Hamlet

I'm the spirit whisperer and circus master at Fair Game Beverage. I manage our team, direct the booze, and keep the wild gears turning every single day. Long before I was calling the shots behind the bar, I was already hooked on the outdoors, good tunes, oak barrels, and serving our folks at The Plant. I guess my main role in the universe is keeping the drinks flowing, our staff thriving, and the good times rolling. My favorite Fair Game pour? A Ginger Twist or our Small Batch Malt Whiskey, neat.

Lead Production

Desi

As Lead Production for over three years, I handle everything we craft in-house—our liqueurs, shrubs, balsamics, and more. Watching this place grow while working in such an open, authentic environment has been amazing. My go-to pour? The Apple Brandy. She’s strong, bold, and made for sipping by the fire.

I'm a member of Fair Game's taste-making and production team. I help produce cocktail recipes, shrubs, and vinegars. My favorite drink on the menu is the "Friskey Sour," and I love the creative outlet that cocktail and product-making provides.

Behind the bar is where I feel most at home, turning great drinks into effortless experiences. Whether I'm holding down a busy room or mixing something custom, I bring relaxing energy and craft to every shift. If you're not sure what to order, ask me for my all-time favorite: The Fortune Teller.

Her mantra? Wherever you go, build community—and bring snacks. With a little jungle wild in her spirit, she comes from a coffee-farm family, where she learned early that good things start with the land, the people who care for it, and the hands that bring them to life. Gathering around the table, sharing food, and telling stories was simply part of life—and a reminder that the best things are meant to be shared. She loves to travel, discover new places, flavors, and makers, and bring those experiences back with her. As Pantry Manager, she’s all about supporting small businesses, building genuine relationships with vendors and guests, and gathering people around a really nice grazing board—because every bite is better with a story. That’s what inspired Meet the Maker, a series celebrating the wonderfully talented, sometimes quirky, always passionate people behind the products we love and share.
